Halloween is already behind us, but zombie muffins, with their rotten-green and a bit leaky looks, are great for any other occassion. And without one as well ;) Despite their looks, they are really yumme~! ;)

There are sooooo many awesome recipes around the net for scary, slimey, leaky or disgustingly delicious desserts for Halloween parties. But most of them are not suitable for allergy sufferers and breastfeeding mothers who avoid allergenic products (and don't have much time to get crazy in the kitchen ;)).
That's where zombie muffins step in! They're ready in a blink of an eye, and they do the job when you need to scare your Halloween party guests, and still enjoy the taste ;)

Muffins are gonna look even better with a cookie tombstone with R.I.P carved on it, or a gummy worms crawling out of them (ours had gummy worms, but we didn't have enough time to make pictures, so I leave the space for your imagination :))

Here's the recipe for 12 muffins:
  • 1 cup of plain flour
  • 1 flat teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 3/4 cup brown sugar (we used Demerara)
  • 2 teaspoons of matcha
  • 1 teaspoon of carob (or cocoa, for those who don't need a substitute :))
  • 1/2 cup of milk (oat milk here, could be any other)
  • 1/3 cup of vegetable oil
  • 2 small eggs, slightly beaten
  • dark jam, not sweet, and preferably with smooth, leaky consistency, not thick (grape or plum are great)
  • matcha and powdered sugar to sprinkle
We've got our ingredients, so the difficult part is over! ;)
In one bowl we mix flour, baking powder, baking soda, sugar, matcha and carob. In the other we mix wet ingredients - milk, oil and eggs. We put the wet mixture into the dry one, and mix it briefly (honestly, just a few moves with a spoon). Next, we fill the muffin baking forms till 1/4, then we put 1 teaspoon of jam, and we cover it with our dough up to 3/4. We bake in 190C degrees for about 20 minutes. After that we let the muffins cool, and spinkle them with matcha and powdered sugar :)

(the dough is rather loose, and because the muffins are the "leaky" type they won't get very high - but they're soft and wet, that's exactly how they're supposed to be :))
